I note the Optus website provides a LOT more detail about the LTE capabilities of the Pixel 5, including which bands are 2x2 and which are 4x4 MIMO.  Not sure how accurate that is.

Were you ever able to find out why Australian SKU Pixel 3s are not e-sim compatible?  The 3a and the 4 are compatible in Australia.  Surely, Google certainly didn't decide to make a model with an e-sim chip and one without it.  In fact the model number of the Australian version is identical to the US version.
I'd settle for actual E-Sim support on my Australian Pixel 3.  Google crippled our devices, yet still charged us higher (relative) prices than other markets.

As a result, I won't buy a flagship google phone - Too many features are US only.
MJ25, he got it to work on a pixel 3a.  The Australian pixel 3a has esim support in Australia (it works on Vodafone officially, but also works with Telstra and Optus despite no official support).  The pixel 3a also supports simultaneous use of the Sim and E-Sim (DSDS)

The Australian Pixel 3 does not support E-Sim, and even in regions where it is supported, the E-Sim cannot be used at the same time as the Sim card.  Pretty crazy given the device costs twice as much as a 3a.  The apparently deliberate exclusion of E-Sim in Australia is even worse, given Australian pricing is higher than most markets where E-Sim is supported!
The Pixel 3a works with eSim everywhere, except the Japanese and Verizon models.  The australian SKU has the esim on the box.
The Pixel 3 has a more explicit (select markets) listed on its specs.  The australian SKU only lists the physical sim on the box.

What's unacceptable is that Google has release blogs promoting e-sim in the Pixel 3, and included the software on our phone with absolutely no way for an Australian consumer to know it's not supported.  The error message directs you to the operator.  Further the setup e-sim page only mentions Japan devices and Verizon and Charter sold Pixel 3/3a as not supporting e-sim!
It's clear that Google really needs to work on it's official e-sim documentation.  Depending on who you talk to at Google or where you look you get a different answer.  

According to Google's own website the only models that do not support e-sim are those sold in Japan, or Verizon and Charter.  The rest should work on a supported carrier (apparently Fi, Sprint or telecom.de - there are more)

This information is clearly incorrect and misleading.  By comparison, Apple make it crystal clear which phones support e-sim and and region specific incompatibilities:

As someone who bought a Pixel 3, I am incredibly annoyed that Google has disabled the e-sim in Australian models.  What makes it even worse is that the Pixel 3a is not crippled in the same way, yet is half the price!
Unfortunately Google has either disabled the e-sim on Australian model Pixel 3s or these models do not include an e-sim.  

Further, Google has published next to no information setting this out, which adds to the confusion.  The feature is hidden, but appears if you enable developer mode (but does not work).  No one at Google is willing to confirm why they did this, and whether it is a temporary  issue, or a permanent difference.
If the pixel 3 E-sim is really disabled/missing, google need to improve their communication.  

There is NOTHING in the phones software to indicate this.  The add operator screen should not appear, and the error message could at least indicate that it is not supported rather than pointlessly referring you to the E-sim operator.  Also, would be good if Google could give an explanation as to why they've disabled or left out the E-sim in the Australian market.
