Hi Vangie,
If you mean to strike through the text, unfortunately there is no way to do that within GCal at the moment.
 
I encourage you to send this feedback to Google so that it can be looked at.
You can send the feedback here:
 
  1. Go to your Google Calendar.
  2. Click on settings button Settings  in the top right
  3. Click Send Feedback.

I am a freelancer, and so my calendar is full of individual appointments all day/everyday, for business and personal reasons. When an assignment cancels, I too need to keep the information, so here's what I do.
  1. I have several calendars that I use as my categories, sort of like how one would highlight different types of activities in a paper date book. In Google you can create several calendars and view them simultaneously. My default calendar/category is labeled ToDo's, and others are Social, Important!, ProBono, and one for each of the companies that hire me. Each is assigned a unique color, (checking with my mobile to view that the colors do appear different there too). You could also do something like Work, School, Kids, Church, Volunteer, etc. I always create the calendars/categories from my PC.   2. Make sure you check all categories as viewable from your calendar settings on your mobile. Initially I made the mistake of creating various calendars/categories, but couldn't see them on my smartphone. Then I found that I had to select them in settings.
  3. NOW HERE'S THE PART THAT YOU WILL FIND HELPFUL.....I have an additional category called "cancelled" and made it GRAY so on that day I can ignore it. But should I need the information later it's still there. I works great. It takes 2 seconds to open the appointment for editing and switch it to "cancelled". If I create another appointment for the same time, it just appears next to the first one. (For business archiving I also note the date it was cancelled, and who informed me of it.)
