Hi Vangie,
If you mean to strike through the text, unfortunately there is no way to do that within GCal at the moment.

I encourage you to send this feedback to Google so that it can be looked at.
You can send the feedback here:

  1. Go to your Google Calendar.
  2. Click on settings button Settings  in the top right
  3. Click Send Feedback.

Thanks!

I am a freelancer, and so my calendar is full of individual appointments all day/everyday, for business and personal reasons. When an assignment cancels, I too need to keep the information, so here's what I do.
  1. I have several calendars that I use as my categories, sort of like how one would highlight different types of activities in a paper date book. In Google you can create several calendars and view them simultaneously. My default calendar/category is labeled ToDo's, and others are Social, Important!, ProBono, and one for each of the companies that hire me. Each is assigned a unique color, (checking with my mobile to view that the colors do appear different there too). You could also do something like Work, School, Kids, Church, Volunteer, etc. I always create the calendars/categories from my PC. Here's how to create multiple calendars:   https://support.google.com/calendar/answer/37095?hl=en
  2. Make sure you check all categories as viewable from your calendar settings on your mobile. Initially I made the mistake of creating various calendars/categories, but couldn't see them on my smartphone. Then I found that I had to select them in settings.
  3. NOW HERE'S THE PART THAT YOU WILL FIND HELPFUL.....I have an additional category called "cancelled" and made it GRAY so on that day I can ignore it. But should I need the information later it's still there. I works great. It takes 2 seconds to open the appointment for editing and switch it to "cancelled". If I create another appointment for the same time, it just appears next to the first one. (For business archiving I also note the date it was cancelled, and who informed me of it.)
Hope that helps!

Another idea is to change the color of the event to gray so you can still see what calendar the event originally comes from.

Deb Greener - Great suggestion.  It is so obviously simple, that it is simultaneously difficult to think about that solution.  Thanks.

I found a free online strikethrough text generator - https://saijogeorge.com/strikethrough-text-generator/ I just copy and paste. Useful for all my coronavirus cancellations ...

Does not work with recurring events because when you add one that has occurred or been cancelled, they all get the same treatment (e.g. recurring weekly staff meetings:  if this weeks gets cancelled and you put it in this special calendar that is gray, all the future ones become gray...no option to choose just the one event).

Another thing you could do is:
1.  Open the event to allow editing
2.  Once the event is opened, look for the color coding (usually near your email name)
3.  Change the text color to RED and edit the event title to add this in capital letters:  CANCELLED.
4.  Although this does not give you a red line, with the color being read and the word Cancelled in the title, it will be there to show as cancelled.  Just a work-around that may help

I solved this by inviting myself to the event and declining the invitation. Works only with Google Calander app.
