Where are you located?
Who is your cellular provider?
Have you contacted the provider's support team to discuss the issue and verify that your phone was properly provisioned, and that you have the proper SIM or eSIM?
Just call them and say you want to check that your phone is properly provisioned and verify that you have the correct SIM. Describe what is happening to you.
Simply showing up with a phone and a SIM (especially if it was used on a phone that didn't have 5G) without getting the cellular company to provision it properly, will frequently lead to problems.
The provisioning process sets up your phone to be able to connect to the appropriate towers and system frequencies.

I'm located in Malaysia. My cellular provider is UMobile and Digi. I solved this problem by disable a simcard (Meaning, I'm using 1 simcard).

Jim is no more than someone with time to answer questions around here (as far as I am aware).
From what I see, a similar issue was already reported in the public issue tracker:
In the meantime you can also send feedback to the pixel team by sending logs of your system:
Open your phone's Settings app. Tap "About phone". And then Send feedback about this device.
To include your system logs, check the "Include system logs" box. These logs help Google when you report a technical issue.
Tap Send.

As of this month I got the Pixel Pro 7 and man o man, bluetooth issues and cellular mobile issues are arising as we speak.
But it seems from the December build until the latest build, you either have a working 5G or a working bluetooth in-car audio (unless you change the Bluetooth Audio Codec to SBC (everytime before you play something like Spotify, in your car))
Otherwise its the known pairing and unpairing issue bluetooth and you have proper 5G.
So after some testing I got to reproduce all issues. 5G connectivity randomly just shows exclamation marks all of a sudden the E (Edge) sign. I have two sims (1 eSim and 1 nano sim) in my Pixel Pro 7 one from work and one from my own. Both Vodafone with official 5G support but both experience the exactly same issues, yeah right. That's no coincidence.
The latest April build has the bluetooth issues solved but the 5G has all of the above and known issues (when does Google put this up as a known issue?).
So I did a backtrack to this version; https://dl.google.com/dl/android/aosp/cheetah-td1a.221105.001-factory-f2793a62.zip
(13.0.0 (TD1A.221105.001, Nov 2022))
(13.0.0 (TD1A.221105.001, Nov 2022))
Fixes everything. So then I wiped everything again (flash-all method). Updated to the latest April build.
And I extracted the 'radio.img' from the above version 13.0.0 (TD1A.221105.001, Nov 2022)
radio-cheetah-g5300g-220908-220908-b-9040061.img
And flashed this in fastboot (fastboot flash radio radio-cheetah-g5300g-220908-220908-b-9040061.img) and voila working 5G and no bluetooth problems.
Keep in mind you WILL need to unlock your bootloader to do this and that will WIPE everything.
But at least you are in control and can choose your own radio.img to fix the issue, until Google sorts this out.
