I wrote a post that guides you through setting it up: https://medium.com/@levihassel/stop-google-photos-from-automatically-uploading-screenshots-on-android-4d53dc5809ec
I hope this approach can help others that are as annoyed with this issue as me! :)

Good afternoon.
You can disable the automatic backup of any folder on your Android device. Open the Google Photos app and tap on the hamburger icon at the top left corner to open the sidebar menu. From there, tap Device Folders to see all of the folders on your phone that contain pictures or videos.
Find your Screenshot folder in the list and tap on it to view the images. At the top of the screen, above the picture thumbnails, you'll see a gray bar that says "Backup & sync" with a toggle switch on the right. Tap that toggle switch to turn it off. From that point on, none of your screenshots will be automatically uploaded to Google Photos.

+1 to the solution of the member:
***This has been tested before posting! **This seems to be the only solution working...tried so many things but finally have my piece of mind. Of course, i had to buy the app (4,59€) in order to also not sync my facebook images.
So sad that even though I bought a 1000€ smartphone, it lacks "not-so-smart" features like this simple one.

It's a goddamn simple fix, just let us choose exactly choose which folder we want to backup, instead of assuming the DCIM folder contains only Camera photos.
I don't blame the devs, like always it's managers/execs who are the idiots here.

Nevertheless, it appears the only solution is to let all your screenshots build up until ready to remove them.
Once you are ready to delete all screenshots from google photos, move the Screenshots folder from within the android DCIM folder to another folder location (e.g. pictures).
Now, go back to google photos, ignore the new folder detected prompts, and click albums. You will see an album called screenshots (providing you only have this one). Simply delete this from google photos.
Due to the save location of future screenshots, another screenshots folder will be created within DCIM folder. So this will need repeating after a period of time.
Manually move the screenshots you want to save into DCIM Camera folder to ensure they stay backed up. A pain I know!
2020 and this is the only solution... It's crazy!
Hope this provides some help!
