just compose a new mail to them / reply to them to auto save the new contact if you havent disabled that feature in settings > general :
Create contacts for auto-complete: When I send a message to a new person, add them to Other Contacts so that I can auto-complete to them next time I'll add contacts myself
or
- hover the mouse over the name so the contact card appears
- click on 'More info'
- 'Add to contacts' is an option at the top of the sidebar that opens on the right.
or in the main gmail screen , click the 9 dots - top right then scroll down to contacts or turn on keyboard shortcuts ( https://support.google.com/mail/answer/6594?hl=en ) then press g c ( goto contacts ) in the top-left corner, click New Contact. see >> https://support.google.com/mail/answer/8933?hl=en
if you have a list of new contacts you want to paste into a new or existing contact group label :
copy the email addresses
go to contacts
click on a label if you want to add to it
click create contact
click Create multiple contacts
paste them in
if you dont want them in an existing label but rather a new label
click create contact
click Create multiple contacts
paste them in
apply a new label
