How can I view my classroom page as a student so I can see what they are seeing?

Hello Laurie,
If you are permitted to use your own personal email address to add yourself as a student, that would be the easiest way. However, you may not be allowed to do this depending on how your domain admin has set up Google Classroom.
If you have the ability to create a fake student account such as "FakeStudent@YourDomain.com" then you can add this fake student to your class, and then sign-in as this fake student. This is is the method I use.
If you cannot create accounts, then you can try asking your domain administrator to do this for you, and give you the password to sign-in.

Will Google actually take onboard the feedback that teachers have with regards to this feature? From what I can see it would really benefit students and teachers around the world and so far Google hasn't done anything about it.
I personally would like a student view so that I can record tutorials for students and parents on how to access and use Google Classrooms. Due to COVID19, we are learning from home again and it is really difficult to explain to parents and students how to use the platform without this feature.
