How soon should I expect Google to index a submitted sitemap?
We suspected that Google wasn't visiting because the sitemap didn't have <lastmod> dates, so we added those and re-submitted the sitemap several days ago. Google still hasn't visited.
What's the typical wait time after submitting a new sitemap?

Googel makes not promises about processing sitemaps. It only 'bothers' if it thinks the sitemap might be useful.
For many sites it may not 'feed the need' to bother with the sitemap.
(and if not fetching the sitemap, it not because of the content of the sitemap. Its making the decision to not process istemaps, without having seen the contents!)

Also if pages are 'quick moving' a RSS style sitemap is more nimble than a 'bulk' XML sitemap anyway.

- The web is a nearly infinite space, exceeding Google's ability to explore and index every available URL. As a result, there are limits to how much time Googlebot can spend crawling any single site.
