I had the same issue. Every single call said "Private Number" even though on the phone number and names shows up. I searched for this and one recommended fix is to open the Wear OS app on your phone which I have not done recently especially since last few updates. There was a prompt asking for permission to access phone call data which I allowed. Now phone numbers show up on the watch for incoming calls.

Enabling the permission in Wear OS app on the phone was also the problem an my Watch. But I did not see the message until I activated location services. Because otherwise I saw only the message that these are deactivated.

For me the fix was to give the Wear OS app on my phone the permission to access contacts – not in the Wear OS app but in the Android settings.

Even I am facing the same issue.
I have tried resetting the Wear OS app settings, have restarted the phone, have checked settings in the watch but still "Private Number" is shown when I receive a call.
