How do I reset the battery usage completely

Those stats should reset after charging the phone up to 100%

That one should also reset after charging to 100%
If not go to Settings - Apps - (See all) - Device health services and try clearing the cache and/or storage on it and see if that helps.

Battery usage is counting from last full charge. Fully recharge your phone for it to reset as Scott suggested.
