How did my recently used apps show 2 apps I'd not used that day

On my recently used apps I saw two apps I'd not used for a couple of days.
Does this mean that someone has installed a remote/spy app or accessed my phone? 
How can I see the usage history for those individual apps.

You can see your app usage history under settings  > digital wellbeing > dashboard.

Where are you seeing this? Please note, the "Suggested apps" strip is not a list of "recently used" apps.

The 4 apps at the very top..it always shows the ones I have most recently used

As mentioned by Mike above, this is the suggested apps not the recent apps. While suggested apps could be apps you have used recently, it is not necessarily always the case. App suggestions use an algorithm which tries to predict what apps you might be using next based on your habits.

To access your recent apps, you swipe up and hold from the bottom bar.
