When I'm on a call, the sound will stop. The other person can hear me. I have to turn off WiFi

Disable WiFi calling.
Go to settings > network & internet > Mobile network > Disable WiFi calling.

I know how to turn off wifi calling. I also know how to turn the phone off entirely. I also know how to buy an iphone to replace it with. What I'm hoping for is a fix.

Some carriers limit features. So perhaps your cellular carrier (whoever that is) limits the use of WiFi calls in your country (wherever that is).
If you don't appreciate the help that you are getting from the volunteer Product Experts in this Help Community, you should contact Google Pixel Support directly, as well as your cellular and internet providers.

Okay, then I will try not to gripe.
BUT -- it goes both ways. If you don't have a positive fix, don't suggest something useless. If there's a known issue with the phone, don't suggest disabling functionality rendering the phone useless. Doing further research, I see a LOT of people with the identical issue, and no reliable solutions. Not surprising there's a lot of us hugely annoyed by having spent a ton of money on a phone that doesn't work well as a phone.
Oh well. If there isn't a known fix, just say there isn't a known fix.
(And by definition, a workable fix isn't restarting the phone every time you want to make a call, or keeping wifi on or off until you want to make a call and then switching it the other way, or other nearly-impossible-to-implement instructions that makes you wonder why you bought a phone that's such a prima donna you can't just use it as a phone.)
BTW, if I can talk for 20 minutes before my sound cuts out, that's not an issue with my carrier limiting features. If it was, it wouldn't work at all.
I didn't realize the help here is limited to volunteers who may or may not have any better clue than my friends who are super tech savvy. So I will reduce my expectations accordingly, unless informed that the volunteers have undergone extensive Google training or have a pipeline to great information resources that the general public cannot access.
