With the changes to Google Photos happening July 2019 (as described here https://support.google.com/photos/answer/9316089?p=drivephotosusers_transition&visit_id=636979716431276034-394539991&rd=1 ) Google Photos and the Google Photos folder in Drive will no longer sync changes. Will new photos still be synced from Photos to Drive, though?

I ask because I am thinking of turning off + deleting the Google Photos folder in Drive, but if I do so, what are my options for getting my Google Photos to be synced to my Mac? At the moment I'm using the "Backup and Sync" app to sync the Google Photos folder within Google Drive to my Mac. Do I understand correctly that this will no longer backup the most recent photos from Google Photos to my Mac, and if so, are there any other alternatives aside from writing some kind of script to periodically download and unzip archive files?

The new photos will be synced no more from "Photos" to Drive. What We know today is that we can't automatically download a photo from Google Photos to local PC after 10th July.
What is the Google Drive app that you are using to backup my Google Photos folder to my Mac. The Old Google Drive app was already stopped and switched to "Backup and Sync" in May 2018. "Backup and Sync" have the all feature of Old Google Drive app.

I use OneDrive in addition to Google Photos and sync the OneDrive camera roll down to my computer.
I then Move the photos to an offline archive and the move effectively deletes them from OneDrive where they will be in the recycle bin for 30 days before deletion. This way doesn't impact the OneDrive storage at all and gives me 30 days to make sure I have safely stored by local copy.
The deletion does not feed back to the mobile device so that copy is safe until you decide to Free up space.

Shoutout to google for removing the only way to sync photos to PC automatically.  (?)

Is there some other hidden way to do it?

Using another cloud service is not what I would consider a viable work around.

Then you did not read accurately enough: the "other cloudservice" is not used for permanent storage, but for syncing to pc merely on a much more safe way. 
And you have no other choice if you want to go on with Google Photos now.

I also don't want the hassle or security issues associated with introducing a second cloud service into the mix. I just want my google photos backed up on my mac like they used to be - This is a major oversight of the drive de-integration. Any word from Google if this will ever be addressed?

Hey Google are you going to address this issue? Would it be possible to add the old functionality under some new setting? I think that more than 90% of the people that pay for extra space on Google Drive would be happy to have that functionality back.

Very sorry to hear, but the disappearance does not have anything to do with the stop with syncing. 
But it is not clear where your pictures are disappeared. 
What did you have done on your phone????

PS: you can download up to 500 in one go from photos.google.com, so generally enough for one month.
