My previous employer is closing down their entire Gsuite setup. My drive is too large (183 Gb) to transfer to my existing personal account so I have downloaded the takeout archive. As docs in native format don't take up drive space I would like to download an archive file containing only files in native drive formats but can't find the option for doing so.

There is no option to create an archive file containing only certain file format, but you can create a folder containing only files in native drive formats and specify it to create an archive. However, it is impossible to save the Google Docs format in native to a local drive because it is a web application file.
The Google Docs format will be allowed to transfer the ownership on the cloud. When you can access your Gsuite account, and if your Gsuite administrator has not restricted file sharing with specified domains only, you could share the Google Docs format with your personal account then transfer the ownership.
