Hi Miguel, sounds like you are saying that files are being uploaded to a Gmail email address and being sent out? If so, check in the "sent" label inside of Gmail to see who was the intended recipient. Also, the person will not be able to access the file if they were not in the destination of it. So if the file was set to only you, even if the link of it got out or etc, no one else can view it.

The instructions for how to share a file is found within https://support.google.com/drive/answer/2494822. So you would need to use the share functions inside of a file for it to be truly seen by others so even if the file landed up inside of Gmail, that has no bearing on the sharing meaning you have to share the file via Drive, Docs, etc for the other person to see it and then download, edit, or etc.

Share with specific people
  1. Under "People," enter the email address you want to share with.
    • Note: If you share with an email address that isn’t a Google Account, they’ll only be able to view the file.
  2. To choose what someone can do with your file, click the Down arrow .
  3. If you don’t want to send an email to people, click Advanced and uncheck the Notify people box. If you notify people, each email address you enter will be included in the email.
  4. Click Send.
You can send other people a link to your file so anyone on the internet with the link can use it. When you share a link to a file, your name will be visible as the owner of the file.
    1. At the top right, click Get shareable link.
    2. Next to "Anyone with the link," click the Down arrow .
    3. Copy and paste the link in an email or any place you want to share it.
If you want anyone on the internet to search for, find, and open your file, you can publicly share a file. When you publicly share a file, your name will be visible as the owner of the file.
    1. Click Get shareable link.
    2. Next to "Anyone with the link," click the Down arrow .
    3. Click More  On - Public on the web.
    4. Click Save.
    5. Click Done.
People who aren't signed in to a Google Account show up as anonymous animals in your file. Learn more about anonymous animals.

Specifically about downloading (and I do not believe that downloading shows up within a document's history): https://support.google.com/drive/answer/2423534?hl=en
    Download a file
    1. Go to drive.google.com.
    2. Click a file to download.
      • To download multiple files, press Command (Mac) or Ctrl (Windows) while clicking other files.
    3. Right-click and click Download.
Note: You can't drag a file or folder directly to your desktop.
If you can't download a file
If you can't download a file, the owner may have disabled options to print, download, or copy for people with commenting or viewing access.

So if you don't want people to download the files, then ensure the options to download it has been turned off.  But if this option is on, then assume that anyone with the access to the document can download it onto their own device or save a copy in their own 'my drive.'
