Hi Or Schiro,
The easiest one to define is 'Events': if you renamed that to 'Meetings', it hopefully gives an indication that this is where you are attending something. It might involve other people ("Meet with boss") or could be "Flight from Stansted to Glasgow".
Reminders are where you want to be reminded about things - for example, if I went to the gym on Thursday evenings after work (going to the gym would be an event), I might add a reminder on Thursday morning to take my gym gear with me to work. Reminders are pretty basic but work well.
Tasks allow you to have multiple items to be done - for example, a task of 'Weekend away' could have subtasks of "fill car with fuel | pack case | take camera | packed lunch | book hotel, etc. Tasks have recently been 'beefed up' by Google so that they can be repeated. Whilst my 'Weekend away' task probably isn't something which you'd put in as a recurring event (nice 'thought that might be!), if you have a regular work meeting, you might use a Task to add all the things you need to do in preparation for that meeting.

EVENT - Is scheduled for a certain day or a time of the day.

REMINDER - Is scheduled for a certain date, and if you do not complete it before that day or on that day by going in and telling the REMINDER that it is completed then it will move to the next day. If not completed on the next day, it will automatically move to the next day, and so on and so forth until you go in and tell it that it is completed. EVENTs do not automatically move unless you reschedule it manually.

How do I change event to a reminder in the calendar?

I have not found a way to change the type. You can delete the original and create a new one with the same title (use copy-paste if it is long).
In addition to what has been said, tasks do not show up on the Android Google Calendar app. You have to install Google Tasks for that, or completely ignore tasks (like I do) and use reminders instead.
