How to unlock more features with the Google Assistant?

Hello, first of all, I just wanted to say that I'm Greek, my phone is Xiaomi Redmi Note 8 and it is also in Greek. My problem with the Google Assistant is that I can't unlock more features of it. I've tried rebooting my phone and updating the whole system and the Google (Beta) App but that didn't work.
I recently contacted a Google Specialist to try to resolve this problem but they sent me a link onto how to change the Google Assistant language, even though I have it in English and I can't have it in any other languages because I don't speak any of them at all. The Greek one isn't available and I hope yet.
Well, I didn't know what to do. I don't know if that appears in anyone's Google Assistant in their Android Phone too but whenever I click it, it says check your connection and try again even though I have a really good connection and the router is next to me. Those both, button and the check your connection issue, appear in Greek.
You can see the button in the first screenshot and the check your connection issue in the second one.
Has this happened to anyone else, too? Let me know.
P.S: I don't own a Google Home.

The Google Assistant is not available in certain languages and countries.
 
The Google Assistant is rolling out to new countries but Google doesn't share which country and what date beforehand.

Does your Xiaomi Redmi Note 8 have the non-Google operating system Oxygen OS?
Phone settings > About Phone > Device Name & Android Version
If so contact Xiaomi support.
 
To request Greek as a Google Assitant language choice
Send Feedback to the Google Assistant support.
Open the Google app .
At the bottom right of the Home screen, tap More   Send feedback.
Tell us about the issue.
Tap Send.
