Got the LG G7 One about 6 weeks ago. LOVED that the built-in Google Assistant button paused the music/radio and pulled up on Bluetooth. Actually allowed Google to hear me and what I was asking her or asking her to do, instead of having to tell over the music/turn it down.
Suddenly last week this feature no longer seems to work. I've dug around in settings to no avail, and searched online, but not found anyone else reporting the same issue. This is obviously phone-specific, so I doubt a common issue, but not sure if it's a glitch, or an awful update?
I've tried rebooting my phone, still no luck.

On your Android phone open Google Assistant app > mini compass icon on the right side of screen > Explore >(3 vertical dots> Settings > tap on your device (phone) > turn ON Google Assistant. If ON, toggle OFF and back ON.
 
What happens if you turn your Android phone OFF and back ON.
 
If your Android phone isn't responding when you ask Ok, Google , go to https://support.google.com/assistant/answer/7283669?hl=en&ref_topic=7172845

Check to see if all of your installed apps on Google Play automatically update at https://support.google.com/googleplay/answer/113412?hl=en
 
Is your Android operating system updated? Open Android Settings > System (or About Phone) > Advanced > System Update > Check for update. If device updates, reboot phone when update is complete.

Check to see if your Android phone has your home address entered at https://support.google.com/assistant/answer/7394009?co=GENIE.Platform%3DAndroid&hl=en

Open Android Settings > Apps > Google (G) app > Permissions > turn ON every choice provided.
 
Turn OFF Alexa or Bixby voice assistant on your Android phone, if equipped, using device user manual.

Hi James, thanks for your response but I don't think you read my question properly...

I have the relatively new, LG G7 One phone; not only does it support the Google Assistant app (it runs on Android One OS), but it has a built-in physical button on the side of the phone called a Google Assistant button.

Google Assistant is on and working. Saying "Okay Google"will bring her up. Even using the button (mentioned above) will open her to listen for instructions. What ISN'T happening is she isn't listening through the car speaker (via Bluetooth) when this button is used to activate her; she is listening through the phone only. This is new, honestly I think since an update.

As mentioned in my original post, I have tried rebooting my phone already. All my apps are updated, so this isn't the issue. I did check for another update since the one that seems to have messed it up, and there was one. This functionality has still not returned though...

This is extremely frustrating as it takes away from the hands-free ability.

Same problem here. I found that from some time even if the assistant is requested by button on the car set, the voice is recorded by phone mic! You can verify that by listening to your recording's on https://myactivity.google.com/item?restrict=vaa

To be clear, I have all settings as requested in Android help pages, including voice match, always on listening and no hands settings like phone wakeup from Bluetooth headset.

On my phone it's located Settings Gear icon>Google on the General Tab>Account Services>Search, Assistant & Voice>Google Assistant>Assistant tab>at the bottom is Assistant Devices> click + to Add that device.  After that click it to modify more settings for that device, like Always-on Voice command.

This could be your Bluetooth device goes into power saving mode, and need to be woke with a button press, a more advance model device may always listen for the Google wake up commands, or a setting on the master device.
