Google assistant voice gender cannot be change from settings, only the main language can

Hello,
I've followed all the options and the settings, either from Google Account or Google Home, but I'm not able to change the gender voice of my second language. While I'm able to change the gender voice of my main language (English US) I cannot do the same of my second language (i.e. Italian) even if I said as a vocal command to Google Nest to change the voice, it says that language will be changed accordingly, but then when I ask a simple question to check the voice return to be as before. I hope is clear what I've written, in case let me know.
