After updating to Android 12 Google Assistant keeps crashing

I have exactly the same issue on my Pixel 3a.

Since the Android 12 update, Google Assistant stops working in the middle of a response to a query.

Clearing cache and storage did not help, neither did a factory reset. Uninstalling updates to Google resolves the issue until I restart my phone, after which Assistant gives a message that it cannot reach Google. If I then update Google, Assistant again stops shortly after starting, and if I again uninstall the updates and restart, I again get a message that it cannot reach Google.

I think I've found the cause and a workaround.

I rebooted into safe mode, and Assistant worked correctly, and also displayed a different and nicer looking interface on the screen. After uninstalling apps, I found that when I uninstalled Norton 360 and Lastpass, the problem disappeared, and the problem reappeared upon reinstalling and granting either of them Accessibility permission as they requested.

I am able to use most of the features of Lastpass without granting this permission; it is for compatibility with older apps that do not use current autofill protocols, and for them, I can still copy and paste user IDs and passwords from Lastpass; it's just slightly more cumbersome. However, Norton's functionality apparently depends upon this permission. I've apparently installed and uninstalled Norton enough times in a short period to now result in a blank screen in the app after reinstallation and attempted login, so I can't work further on this issue with that app, and I've uninstalled it.

Accessibility for downloaded apps shows that Action Blocks and Lastpass are now both turned off, and no other apps are listed. (I don't use Action Blocks.)

I suspect that this issue with Accessibility permission is a bug in Android 12 rather than a bug in the apps.

Update: the same problem occurs if I install bitdefender and enable accessibility. So apparently enabling accessibility for any non-built-in programs will cause the problem.
