I was about to set up 2 goals for my nonprofit organization- for Users to visit 2 pages of our current projects.
But now I am thinking, what happens when these projects are finished? Then it will not be useful for me to have this conversions.
Do you think I should still make this as goals and then make them inactive, or maybe create separate view for this 'temporary' goals?

Generally, number of pages visited is a very weak way to track interaction with your website. It's just not that meaningful.
 
What's the website address? Might be able to suggest alternative conversions to track.
 
Are you setting up goals in order to drive conversions in a Google Ads account, or some other advertising platform? Or just to track impact?
 
Don't set up a separate view, that's unnecessary. No reason you can't set up goals for short-term purposes, then deactivate them when finished.
