Hi, Thanks for posting in Google help forums,
There is no" Sign out "option in Android phone as you see in desktop computer ,
For Sign out in Android phone,
You should Remove your Google Account / Accounts,
Go to Settings> Accounts / Users & Accounts> Account name / names> select Account,
Select Remove Account,
Finish the process,
For Sign back,
You should Add your Google Account,
Return to Settings> Accounts / Users & Accounts>. Add Account> Select Google>
Follow the On screen instructions and Add Account,
When you Sign out and Sign back,
Some changes you made Maybe revert to Default Settings,
Check Settings.

open the gmail account on your phone>manage your google account>security>under your devices choose manage devices>click on the 3dots beside the device you want to sign out of (eg: windows)>signout.
