After installing Google Workspace Sync for Microsoft Outlook (GWSMO), you can use Outlook to access either your Google Workspace account, or the previous account you're switching from. (The data in each account is kept separate.) Each time you start Outlook, you're prompted to choose the profile for whichever account you want to open.
When you no longer need access to your previous account, however, you can have Outlook open your Google Workspace profile automatically, without prompting you to select it from a dialog. Use the "Always use this profile" setting to have your Google Workspace profile open directly the next time you start Outlook. Consult your Microsoft documentation on how to turn your Outlook profile prompt on or off.
If you later want to access another profile (such as your old Microsoft Exchange account), you can change the setting back to "Prompt for a profile to used". The next time you start Outlook, you'll be prompted to select a profile.
